Pastitsio noodles with Tomato sauce and feta

Here’s a super easy macaroni recipe. Do you ever have left over noodles after making pastitsio? My Mom used to cook some of these noodles and we’d add butter and grated cheese (mizithra or Parmesan) YUM! I decided to make a quick tomato sauce tonight.

Ingredients

Pastitsio noodles – I used a 1/4 package, because that’s all that was left 🙂

2 Tbsp      EVOO – Extra Virgin Olive Oil

1               Red Onion, diced

2 Cloves   Garlic, chopped

1 tsp         Tomato paste

2               Anchovy fillet, chopped

1oz            Feta, crumbled

Basil

Rosemary

Parmesan cheese

Preparation

Boil the noodles according to package directions. You can take it out a couple minutes before they are done and let the noodles cook in the sauce for a couple minutes.

Heat up some EVOO over med-high heat, add the chopped onions and saute for about 5 minutes, then add the garlic, anchovies, tomato paste, rosemary and basil. Cook for another 5 minutes or so until the onions start to caramelize and the anchovies melt into the sauce.

Turn the heat down to medium and add the feta cheese. Stir to incorporate into the sauce.

Add the drained noodles and cook for a couple minutes on low heat.
