Balsamic sautéed pork and mushrooms on homemade Ciabata

Ingredients:
1 Tbs                           EVOO
2 Tbs                           Butter
1 Tbs                           Balsamic Vinegar
1 C      Sliced 1/4”       Pre-cooked pork
½ C     Sliced              Onion
½ C     Sliced              Mushrooms
¼ C     Sliced              Aged Cheddar Cheese (Slices for top)
½         Sliced              Avocado
1          Chopped         Green Onion
Salt and Pepper to Taste
4          Slices              Bread
1 Tbs                           Mayo
1Tbs                            Mustard (optional)
Directions:
On medium, heat EVOO and butter in pan. Add onions, mushrooms and balsamic; cook until lightly browned. Add cooked pork, Add salt and pepper to taste. Cook until browned. Turn heat to low and lay the cheese on top, cover until melted. Sprinkle green onions on top.

Spread mayo or mustard on the toasted bread, add the meat/cheese on top of the bread. Lay the avocado slices and green onions. Salt and pepper to taste.
