White bean, Amaranth, Red Onion and Smoked Salmon Salad

Easy Side dish for a Sunday night dinner.

Ingredients:
White beans          Canned or dried/soaked/cooked
Amaranth              Chiffonade (can substitute basil)
Red Onion            Diced
Smoked Salmon   Diced
Lemon                  Juice 1/2 and Zest
EVOO
Salt
Pepper
Avocado              Diced (Optional)

Combine the first 4 ingredients in a bowl. Whisk together the juice of half a lemon and the olive oil.
Lightly dress the salad and garnish with lemon zest and salt and pepper. You can also dice or slice up some avocado.
