Mushroom Stroganoff
Low calorie creamy mushroom stroganoff – Weight Watchers zero points

Cook Time 25 – 30 minutes
Ingredients
1 Cup Vegetable Stock
2 Cups Onion Diced
4 Cups Mushrooms (Assorted) Diced
1 Tbsp Smoked Paprika
1 Tsp Lemon zest Grated
½ Cup Greek Yogurt Fage 0%
1 Tbsp Parsley Chopped
Instructions
Heat 1/2 cup of the stock over medium high heat. Add onion and lower heat and simmer covered for 11 minutes.
Add mushrooms and simmer 5 minutes.
Add paprika, lemon zest and remaining 1/2 cup of stock.
Simmer 11 minutes until reduced by 1/3. Remove from heat.
Let stand 5 minutes and add Greek yogurt and sprinkle with parsley.
