Started out with a nice salad of Mixed greens and kale from the garden. Garnished with garbanzo beans, red bell peppers, tomatoes, green onions, avocado, feta cheese and topped with grilled chicken strips. Dressed it with a simple lemon and balsamic mixture.
Freestyle dolmathes
I went into the back yard and picked some grape leaves from the vines, parboiled for a minute and filled with a mixture of organic, quinoa, brown rice, lentils and oat bran for a binder. I also included some minced celery, garlic and carrot. Simmered in vegetable broth for an hour.
Dessert – Baked banana
I just threw this dessert together on a whim. I had these VERY ripe bananas and was going to make banana nut bread, but ran out of time. These banana delights were a snap to get ready and baked lees than 15 minutes at 450. Easy peasy to make and clean-up. I used what I had on-hand. A little orange juice or lemon or rum can be substituted.
Ripe bananas
1 – Tsp sugar
1/2 Tsp Lemon extract
1/2 – 3/4 Tsp Vanilla extract
1 – Tbs Triple Sec 1 tbs
A sqeeze of lemon juice
